Introduction
Sweet potato is produced all over India. It has high amount of carbohydrates. It is a tuber grown in the ground. There is a lot of difference in its varieties in terms of root, tuber and colour. Some of its varieties are yellow and white in colour. Purple coloured varieties are found in large quantities in South India. White sweet potato is called 'Garaad'. It appears white when peeled. These are long and round variety. Red sweet potato is sweeter and tastier than Garaad, its price is more. Sweet potato is peeled and made into vegetable. Puri-pakoras and kheer etc. are also made from it. Sweet potato is also used as fruit diet during fasts. The flour made by boiling and drying sweet potato can be mixed with any other flour.
Sweet is made from vine leaves of sweet potato. Before preparing the vegetable, the leaves should be roasted on a pan. It is energy-giving, smooth, removes phlegm, heavy and stops stool. On frying in oil, it becomes more soft and tasty. Red sweet potato is sweet, cold, strength-enhancing, heavy and nutritious. It removes the burning sensation and heat caused due to excessive work. According to “Sushruta”, sweet potato is a phlegm-producing, heavy and wind-producing. According to Vagbhata, sweet potato is hot, spicy, wind-producing and phlegm-destroying. Sweet potato is easily digested and is suitable for hardworking people. It is not suitable for weak and lazy people. Generally sweet potato is a wind-producing.
Properties
It is cold. It takes time to digest. It calms the defects of heat, increases semen to a great extent. It makes the body strong and powerful and brings obesity. It removes constipation and produces wind in the body.
