Introduction
Barley has been used since ancient times. Barley was the main diet of our sages and saints. Barley has been accepted as an offering in Yagya by the Vedas. Barley looks completely different from wheat in terms of taste and shape, but it is a grain of the wheat species. If seen from the point of view of quality, barley is lighter than wheat and is also a coarse grain, which is found all over India. Barley plants are similar to wheat plants and have the same height. Barley is mainly of 3 types. Sharp-pointed, tipless and fine with a greenish tinge. Barley with a tip is called Yav, barley without a tip and black with a reddish tinge is called Atyava and fine barley without a greenish tinge is called Tokyayav. Atyava is considered to be of lesser quality than Yav and Tokyayav is considered to be of lesser quality than Atyava.
There is also a wild species of barley. Barley of that species is used to make medicines in Europe, America, China, Japan etc. Sattu is made by roasting barley, grinding it, adding a little salt and water to that flour. Some people put jaggery in Sattu instead of salt and Sattu is also eaten by adding ghee and sugar.
